16 May 2023

Exec Chef Harvey Ayliffe is bringing some British dishes and giving them a ‘Wonderland twist’ including sense-heightening experiences, imaginative cocktails and more.

You can read all about The Rosarium below in their own words, but be warned, it will definitely make you hungry….

The Rosarium is now open at The Sidings; an enchanted dining oasis hidden beneath the bustle of Waterloo in The Sidings. With visionary Executive Chef Harvey Ayliffe overseeing the offering, expect elevated British dishes – but with an added Wonderland twist. Promising to bring out the inner child in those who dine, the menu incorporates performative and sense-heightening experiences into the dishes. With an imaginative cocktail list alongside a variety of dining spaces; dine, drink and discover at The Rosarium.

Step into a quintessentially English garden where the 96-cover restaurant will serve lunch and dinner as well as a unique afternoon tea experience. The all-day menu begins with grazing dishes and elevated simple starters; highlights include Woodland mushroom soup with truffled straws and Scampi scotch egg with asparagus soldiers. For the main event, diners can choose from a variety of dishes – there’s the quirky twist on the perennial favourite of fish and chips, Cod in a Chip, the decadent Ale-Braised beef mac with Montgomery cheddar or for those looking for plant based, Lentil and caramelised shallot pie.

Indulgent sharing platters will feature Angus Cote De Boeuf with gunpowder chips and peppercorn sauce, Roast Scottish hake with butterbean, chorizo, piquillo pepper and aioli or Moroccan spiced vegan mixed grill with buckwheat, pomegranate and almonds. Inclusive of vegan options, sides are no afterthought – Tenderstem broccoli with miso and sesame, Kale with pine nut and chilli and Baked cauliflower mozzarella.

Designed to pique curiosity, the dessert menu includes Molten chocolate pudding with flambé cherries, nostalgic Lemon meringue and poppyseed arctic roll and the deliciously tangy Rhubarb and custard tart.  Grab two spoons and enjoy the Champagne trifle with raspberry and elderflower, or the Mad Hatter’s strawberry sundae for two.

The Rosarium’s magical afternoon tea menu kicks off with a variety of finger sandwiches: fillings inclusive of tandoori chicken with raita, roast beef with peppercorn mayo and oyster mushroom bacon with avocado. Savoury bites include the Scampi scotch egg with chilli mayo and Sausage roll royal with apple miso dip. Scones with clotted cream and berry preserves are followed by a range of patisserie; ‘Queen of Hearts’ jam tart, Lemon meringue choux bun and Blood orange, dark chocolate and hazelnut madeleines – to name but a few. A range of tea and coffee alongside bubbles are on offer, all presented in an enchanting picnic hamper.

The restaurant’s interiors have been imagined and realised by Faber. The design draws from the architecture of the quintessential English gardens of Lewis Carroll’s era, where opulence and the surreal blends to create a magical effect. Those commemorating a special occasion can choose from the venue’s three dining spaces; the central glasshouse, the indoor terrace, or for a private dining experience like no other, hide away in The Rosarium’s secret garden.

Executive Chef, Harvey Ayliffe “Having been lucky enough to have worked at some of London’s best restaurants, I wanted my next adventure to capture some of the fun, skill and playfulness of all that London has to offer, taking from its past as well as its fiction, for something truly magical. The aim is to bring out the inner child in all that dine with us and inject some magic into every bite”.

The Rosarium is the first opening of the launchpad permanent venue, Labyrinth, from the newly formed experiential production company from the Creative Directors of Les Enfants Terribles, Oliver Lansley and James Seager, and the internationally renowned producers Hunter Arnold and Gavin Kalin. Looking to transport audiences to different worlds through the means of in-depth storytelling, beautifully realised environments and exciting possibilities via world-class immersive theatre, bars and restaurants; they are also delighted to announce the arrival of immersive show Alice’s Adventures Underground and brand-new cocktail bar Underland later this year.
